SAUSAGE HISTORY: Sausages takes their name from the Latin word 'Salsus" which means salted.  They have been around for over 2700 years, and come in many different shapes, varieties and forms.

WHAT IS A SAUSAGE? Traditionally sausages are made using ground meat, herbs and spices, and possibly other ingredients, usually packed into a natural or synthetic skin casing.  The sausage can either then be cooked and eaten fresh or preserved in some way, often by smoking or curing.  Fresh sausages are made from meats that have not been previously cured; they must therefore be refrigerated and cooked thoroughly before eating.

ENGLISH SAUSAGE: It is estimated that there are about 400 sausage varieties in the United Kingdom, the majority of which are unique to the region in which they are made.  Most English sausage is made from pork.

HOW TO EAT ENGLISH STYLE SAUSAGE: Fresh sausages can be eaten in any number of ways.  They are popular at BBQs but are also traditionally eaten at breakfast with fried eggs, bacon, toast, etc.  They may also be eaten as a lunch or supper dish, where 'bangers & mash' is a particular favourite (follow the How to Cook link at the top of the page for an explanation of bangers & mash).   Sausages may be eaten on their own or as part of a main course, and are fantastic when added to stews, casseroles and soups.

STORING SAUSAGE: Fresh sausage will keep in the refrigerator for 2 - 3 days, and up to 6 months in the freezer.

WHAT TO LOOK FOR WHEN BUYING SAUSAGE: Look for juicy, plump sausages with a high meat content (70% or more), fresh herbs and natural skins. The quality of the meat is also important. Irving Farm Fresh source meat locally and all meat is government inspected to high quality standards.

Avoid cheap sausage - they will often contain less meat, more fat, and the meat may be of poor quality. Some butchers use less appealing meat to make sausage because you cannot see it. Poor quality sausages often contain high levels of unhealthy saturated fat, and will shrink when cooked.
