Wild Game Sausage

Our custom game sausage making is unique - you actually get to choose the seasoning in your sausage. How often have you had sausage made when you have had an animal processed, and discovered that you actually don't like the taste. We offer a wide choice of seasoning, and depending on how much meat you would like made into sausage, we can make several different varieties. The minimum quantity of meat required per seasoning is 15 lbs.

The meat supplied does NOT have to be government inspected. We require all meat to be supplied ready boned. Sausage can be made with any domestic or wild game meat. We will also add in Pork to your wild meat, at a rate that you choose. Most customers request to add 25% Pork, but we have done as much as 50% Pork added.

Irvings Regular Seasonings: Cumberland, Lincolnshire, Leek, Breakfast, Rosemary Garlic, Garlic, Sweet Chilli Zinger, Maple, Mild or Hot Italian, Bratwurst.

Irvings Specialty Seasonings: Habanero Chili, Sundried Tomato & Basil - Add and extra $0.25 per Lb

Smoking and Curing: We are also able to offer a selection of cured / smoked sausages. Recipes include Regular Smokies, Garlic Sausage, and Beerstick.
