BRITISH FAVOURITES English Breakfast Sausage: Our own recipe breakfast favourite. A delicately seasoned fresh pork sausage to compliment any breakfast. However, don't just eat them for breakfast, as they are delicious at any meal or snack time. Old
English 'Lincolnshire' Sausages:
This is our version of the world famous recipe, using only the finest pork and fresh sage.

Old
English 'Cumberland' Sausages: This
fresh pork sausage originates from the English county formerly known as
Cumberland, but more recently referred to as Cumbria. The sausage is
usually sold in a 'coil', and was traditionally bought by
length
rather than weight. It can be cooked whole, or cut into sections. This
sausage is made from the finest cuts of pork, freshly ground black
pepper, and a
unique blend of herbs featuring Nutmeg. The recipe is a well kept
secret, held by many generations of
family sausage makers in Cumberland county.
Pork and Leek Sausages: This is a very simple, attractive green flecked sausage with exceptional taste. It incorporates the flavours of quality pork and the fantastic flavour of fresh leeks. Taste a sample next time you are at a Farmers Market, then cook and eat them as you wish. INTERNATIONAL SELECTION Pork and Maple Sausages: This is an English style sausage with a Canadian twist. The combination of pork and real maple sugar blends exceptionaly well to produce the expected flavour of quality, fresh pork but with a taste of maple and just a hint of sweetness in the aftertaste. It is one of our most popular products. Try a sample next time you are at a Farmers Market; we think you will be pleasantly surprised and look forward to a second tasting! Italian Sausage: This is our own recipe mild italian sausage, which is a fusion of Italian herbs and spices, with fragrant fresh ground fennel seeds, and just a hint of cayenne to add some bite. For those that prefer more heat, ask us about custom made hot italian sausage. Sweet Chilli Zinger:For those who dare, try our combination of southeast asian flavours with the heat of Thai peppers, making a sausage with a powerful 'kick' all of its own. If this is not hot enough for you, then ask about a new sausage with Habanero and Scotch Bonnet Peppers - that should provide plenty of 'kicks'. Habanero Chilli: For those who really like it hot! This scorching blend of habanero and scotch bonnet peppers with just a touch of sweet chilli to tantalise your tastebuds! (NEW) JUST PLAIN TASTY! Rosemary and Garlic Sausage: The combination of pork shoulder, garlic and just a hint of Rosemary, makes for a taste to remember. If you love garlic, then you will really love this sausage. Honey Garlic: If you prefer a sweeter taste with the garlic, then our honey garlic is just for you. We are working on a new recipe for this sausage, made using only natural flavours. NEW PRODUCTS We are continually developing and adding new products to our range. New products will be flagged on this page as 'NEW', and launched with special 'tastings' at Farmers Markets. CUSTOM

Should you have any special dietary requirements (e.g. wheat / gluten free), or just fancy a particular flavour, please ask about custom made sausages. We can usually cater to individual requirements, subject to a small minimum order quantity. Please ask!! GLUTEN FREE PRODUCTS: All of the above sausage recipes are strictly gluten free. I now only make Gluten Free Sausage in our facility, so have confidence that you can enjoy this product without suffering! CUSTOM
SAUSAGE MAKING
We are now able to offer the service of making fresh sausage with your own domestic or wild game meat, although no smoking or curing is available at this time. All meat must be provided already boned. Prices have had to increase in 2008 due to the rise in the price of natural casings - since the start of the year the prices have increased by a whopping 133%, something we just cannot ignore. Charges:
Fresh sausage making including grinding and basic seasonings (see list below) $4.40 per KG or $2.00 per Lb Vacuum packed, packed into wrapped
trays, or into boxes
/ cases with liners:
$0.50 per KG or $0.25 per Lb Pork Shoulder Meat to add $4.40 per KG or

Maple Sausage, Honey Garlic Sausage, Italian Sausage - Mild or Hot, Garlic Sausage, Garlic and Rosemary Sausage, Cumberland Sausage, Lincolnshire Sausage, Sweet Chilli Zinger Sausage, Leek Sausage, Breakfast Sausage, Habanero Chilli Sausage. BASIC SEASONINGS - these are premixed seasonings available on special request.
